Converting Google Sheets Shortcuts directly to OpenDocument Spreadsheets (.gsheet to .ods conversion) is, per se, not possible, since .gsheet files only contain a link reference to an actual Google Sheets spreadsheet.
You can however use your .gsheet shortcut to open the Google Sheets spreadsheet, and then download it as an .ods file using the 'File -> Download' function.
